Ingredients for 3 People:
- 300 g chicken thighs
- 200 grams of Basmati Rice
- 2 cloves' Garlic
- Tomato Sauce
- 1 onion
- 1 leaf of 'laurel
- Spices various q.b
- 1 cube of chicken stock
- Fresh Coriander q.b
- Oil Extra Virgin 'Olive

- Black pepper q.b
Preparation:
In a saucepan cook the chicken thighs cut (possibly bone) with a little 'extra virgin olive oil, add onion, spices and chicken broth. After a few minutes add the tomato sauce and black pepper. Leave to cook with the lid for 10 minutes. Turn off the heat and add the finely chopped cilantro. In another pot, boil water with salt and 1 leaf of 'bay, add the rice. The cooking time for rice is 10 minutes after taking up the boil. Calculate serving quantities of water equal to twice the weight of the rice; best to put a little 'more water, if you are unsure, and then drain the excess water and dry on low heat for 2 minutes. Serve by placing rice in the pot and putting on a leg of chicken with its sauce.
